This skillet works on gas, electric coil, and smooth-top radiant cooktops. The flat copper-clad base makes full contact with the heating element, so energy transfers efficiently. We don’t recommend it for induction cooktops because stainless steel alone won’t trigger the magnetic field; our tri-ply induction-ready line serves that need.

You can transfer the pan directly from stovetop to oven for finishing techniques — searing a steak on the range, then sliding it into a 350°F oven to bring it to temperature. The phenolic handle is oven-safe up to that limit. Beyond 350°F, the handle may soften or discolor. For higher-heat oven tasks, we suggest our all-metal handle skillets or removing the handle if the design allows.
